Ever come home after a long day and just can’t be bothered with anything complicated for dinner? Yeah, me too. That’s exactly why I love these Lazy Cabbage Rolls. All the cozy, comforting flavors of traditional cabbage rolls—but without the endless rolling and fuss. Juicy, flavorful meat mixed with rice and veggies, all baked in a luscious, creamy tomato sauce that practically melts in your mouth. It’s simple, satisfying, and perfect for those nights when you just want dinner to feel like a hug.

Why You’ll Love These Lazy Cabbage Rolls

  • All the classic flavor of traditional cabbage rolls — without the wrapping.
  • Creamy tomato sauce that’s rich and balanced, thanks to a splash of cream.
  • Family-friendly, budget-friendly, and great for meal prep.
  • Comfort food that feels like a warm hug after a long day.

Ingredient Notes

  • Mixed minced meat (1 kg): A blend of pork and beef gives the best flavor and juiciness. You can also use turkey or chicken for a lighter version.
  • Cabbage (500 g): Use white cabbage for the classic taste. Slice it thinly so it softens beautifully while baking.
  • Milk rice (150 g uncooked): Cook it normally first, then let it cool before mixing. It adds that creamy, slightly sticky texture that holds everything together.
  • Onion and carrot: These add natural sweetness and depth. Grating the carrot helps it melt right into the mix.
  • Eggs: Help bind the mixture so the rolls stay soft but don’t fall apart.
  • Garlic and thyme: The secret to that warm, homemade aroma. Fresh or dried thyme works fine.
  • Creamy tomato sauce: A mix of strained tomatoes, tomato paste, cream, and a little agave syrup. The cream balances the tang of the tomatoes, giving that velvety, rich texture that makes this dish so cozy.

Variations to Try

One of the best things about Lazy Cabbage Rolls is how flexible they are. You can play around with the ingredients and make them your own.

  • Vegetarian version: Replace the meat with cooked lentils, mushrooms, and a bit of rice. Add smoked paprika for that deep flavor.
  • Spicy twist: Mix in a pinch of chili flakes or cayenne pepper to the sauce for gentle heat.
  • Cheesy comfort: Add a handful of shredded cheese on top for the last 10 minutes of baking — it melts into the sauce like magic.
  • Different grains: Try quinoa, buckwheat, or brown rice instead of white rice for a wholesome spin.
  • Extra veggies: Zucchini, bell peppers, or spinach mix beautifully into the filling.

How to Store and Reheat

  • Fridge: Store leftovers in an airtight container for up to 3–4 days.
  • Freezer: Once cooled, freeze individual portions for up to 2 months.
  • Reheat: Warm gently in a pan or in the oven at 180°C until hot. Add a splash of water or cream if the sauce thickens too much.

They’re perfect for meal prep — one baking dish makes several comforting meals that taste homemade even after reheating.

Serving Ideas

Serve your Lazy Cabbage Rolls with a dollop of sour cream, a slice of crusty bread, or a simple green salad. The sauce is so good you’ll want to scoop up every drop.
