Ingredients
  

  • 2 baby cucumbers
  • 1 carrot
  • 2 tbsp sunflower seeds
  • Parsley to garnish

Dressing:

  • 150 g Greek yogurt
  • Juice of 1/2 lemon
  • 1 tbsp honey
  • 2 cloves of garlic pressed
  • 1 tbsp grainy mustard
  • Salt to taste
  • Pepper to taste
  • Chili flakes optional for added spice

Instructions
 

  • Slice baby cucumbers and julienne carrots. Chop parsley for garnish.
  • Toast sunflower seeds in a skillet until golden brown.
  • In a bowl, mix Greek yogurt, lemon juice, honey, minced garlic, grainy mustard, salt, pepper, and chili flakes to taste.
  • Add sliced cucumbers, julienned carrots, and toasted sunflower seeds to the dressing. Toss to coat evenly.
  • Sprinkle with chopped parsley.
