Ingredients
  

  • 1 sheet puff pastry (275 g)
  • 400 g asparagus
  • 3 tbsp crème fraîche
  • 100 g mozzarella grated
  • 125 g mozzarella balls
  • 50 g Parmesan shaved
  • A handful of cherry tomatoes
  • 1 small red onion
  • 1 egg yolk for greasing the edges
  • 2 tbsp sesame seeds (for the edges
  • 3 tbsp honey
  • Salt to taste

Instructions
 

  • Preheat your oven to 180°C (356°F).
  • On a clean and lightly floured surface, roll out the puff pastry. Transfer it to a large baking sheet lined with parchment paper. With a sharp knife, lightly score a 2 cm border around the edges of the puff pastry.
  • Spread the crème fraîche evenly inside the scored border.
  • Line up the asparagus spears on top of the crème fraîche. Add halved cherry tomatoes, thinly sliced red onion, grated mozzarella, shaved Parmesan, and mozzarella balls. Season with salt to taste.
  • Brush the edges of the puff pastry with the egg yolk, then sprinkle sesame seeds over the edges.
  • Bake in the preheated oven until the pastry is puffed and golden, about 25 to 30 minutes.
  • Drizzle honey on top of the tart right before serving.
