Ingredients
  

  • 3 large Russet potatoes
  • 2 tbsp olive oil
  • 100 ml heavy cream
  • 2 tbsp butter
  • ½ bunch chives chopped
  • 50 g mozzarella cheese grated
  • 50 g cheddar cheese grated
  • 5 strips bacon
  • 2 tsp large sea salt
  • Black pepper to taste
  • Chili flakes to taste

Instructions
 

  • Prepare the Potatoes: Preheat oven to 400°F (200°C), rinse potatoes, poke holes with a fork, rub with olive oil, sprinkle with salt, place on a baking sheet, and bake for 60-70 minutes until fork-tender.
  • Cook the Bacon: While potatoes bake, cook bacon in a pan over medium heat until crispy, then cool and chop into bits.
  • Prepare the Filling: Once potatoes are done, let cool for 5 minutes, slice off tops, scoop out insides, and mash with butter, heavy cream, chives, bacon, mozzarella, salt, pepper, and chili flakes.
  • Stuff and Bake Again: Spoon the mixture back into potato skins, top with cheddar cheese, and bake at 400°F (200°C) for 15 minutes until cheese is melted and golden.
  • Serve and Garnish: Remove from the oven, top with sour cream, bacon bits, and chives, then serve hot and enjoy!
