Ingredients
  

  • 1 sheet puff pastry
  • 500 g cherry tomatoes
  • 20 g butter
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1 tsp fresh thyme leaves
  • 1 sprig rosemary
  • Salt to taste
  • Freshly ground black pepper

For serving (optional but recommended):

  • Burrata
  • Balsamic cream

Instructions
 

  • Prepare the caramelized tomatoes: Heat butter and honey over low heat until caramelized, then add cherry tomatoes and cook until softened.
  • Add herbs and balsamic: Stir in thyme and balsamic vinegar, reduce for a couple minutes, then season with salt, pepper, and rosemary.
  • Preheat and prepare the pan: Preheat the oven to 200°C and grease a tart pan with butter.
  • Assemble the tart: Arrange tomatoes evenly in the pan, cover with puff pastry, press edges to seal, and prick with a fork.
  • Bake: Bake for about 20 minutes until the pastry is puffed and golden, then let cool slightly.
  • Finish and serve: Top with burrata and drizzle with balsamic cream before serving.

Notes

  • Choose ripe cherry tomatoes for the best flavor. The sweeter and juicier they are, the more delicious the caramelization will become.
  • Keep the heat low when cooking the tomatoes with honey so the mixture caramelizes slowly without burning.
  • Don’t skip the fork pricks in the puff pastry. It helps steam escape, preventing the crust from becoming soggy and keeping it beautifully crisp.
  • Let the tart cool slightly before adding burrata. If you add it while the tart is too hot, the cheese can melt too much and lose its creamy texture.
