Ingredients
  

  • ½ pointed cabbage
  • 1 red onion thinly sliced
  • 1 carrot grated
  • 3 tbsp fresh parsley chopped
  • 125 g bacon cubes fried until crispy
  • 3 tbsp sunflower oil
  • 3-4 tbsp vinegar (apple cider or white)
  • Salt and pepper to taste

Instructions
 

  • Prep the veggies: Slice the pointed cabbage into thin julienne strips, grate the carrot, cut the red onion into thin slices, and finely chop the parsley.
  • Soften the cabbage:Place the cabbage in a large bowl, sprinkle with a little salt, and massage it gently with your hands for 1 minute to soften it slightly.
  • Combine the vegetables: Add the grated carrot, sliced red onion, and chopped parsley to the cabbage.
  • Cook the bacon: In a skillet over medium heat, fry the bacon cubes until crispy and golden. Once done, add the warm bacon (with a bit of the fat if you like) directly into the bowl with the vegetables.
  • Add the dressing: Drizzle the sunflower oil and vinegar directly over the mixture. Season with salt and freshly ground black pepper to taste.
  • Mix and serve: Toss everything together until well combined. Let it sit for 10–15 minutes, or serve right away for a crunchy, flavorful side dish.
