Ingredients
  

  • 6 Flour tortillas 15 cm
  • 200 g gouda cheese
  • oil for frying

For the Beef Filling:

  • 250 g ground beef
  • 1 small onion finely chopped
  • 1 tbsp tomato paste
  • ½ tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp paprika powder
  • ½ tsp chili flakes adjust to taste
  • 1 tsp granulated garlic
  • ½ tsp salt adjust to taste
  • ½ tsp black pepper
  • cup water

For the Fresh Salsa:

  • ½ onion diced
  • 2 tomatoes diced
  • Fresh cilantro chopped
  • Juice of ½ lemon
  • Salt and pepper to taste

Sauce:

  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tsp mustard
  • 1 tbsp onion diced
  • 1 tbsp pickle finely diced
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions
 

  • Cook the Beef: Sauté chopped onion in oil until soft, add ground beef and brown, stir in tomato paste and spices, pour in water, and simmer until thick and saucy.
  • Prepare the Fresh Salsa: Mix diced onion, tomatoes, cilantro, lemon juice, salt, and pepper; set aside.
  • Make the Special Sauce: Combine mayonnaise, ketchup, mustard, finely diced onion, diced pickle, smoked paprika, salt, and pepper.
  • Assemble and Crisp the Tacos: Layer Gouda on a tortilla, add beef, sprinkle more Gouda, fold, and cook in a little oil until golden and crispy.
  • Finish and Serve: Top with fresh salsa and drizzle with creamy sauce; serve immediately.

Notes

  • Tortilla choice: Soft flour tortillas work best for folding and crisping; you can use gluten-free tortillas if needed.
  • Cheese layering: Adding cheese under and over the beef helps it melt evenly and hold the taco together.
  • Beef options: Ground beef can be lean or regular; you can also use ground turkey or plant-based alternatives.
  • Spice level: Adjust chili flakes and paprika to taste.
