Ingredients

  • 285 g corn fresh, canned, or frozen, drained if canned
  • 120 g all-purpose flour
  • 50 g cheddar cheese grated
  • 80 ml milk
  • 1 tsp baking powder
  • 2 eggs
  • 1 tbsp paprika paste
  • 2 tbsp fresh parsley chopped
  • 2 tbsp chives chopped
  • Salt and pepper to taste

Instructions

  • Prepare the Batter: In a large mixing bowl, combine all ingredients – corn, flour, cheddar, milk, baking powder, eggs, paprika paste, parsley, chives, salt, and pepper. Stir well until all ingredients are fully incorporated into a thick, even batter.
  • Cook the Fritters: Heat a non-stick skillet over medium heat and add a small amount of oil. Scoop about 2 tablespoons of the batter for each fritter and place it in the skillet, flattening slightly with the back of a spoon. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  • Serve: Remove from the skillet and place on paper towels to drain any excess oil. Serve warm with your favorite dipping sauce or a dollop of sour cream.
