Salad:

  • 200 g halloumi cut into cubes
  • 1 cup cherry tomatoes halved
  • 1 cucumber thinly sliced
  • 1 ripe peach sliced
  • 1 tbsp white sesame seeds
  • 1 tbsp black sesame seeds
  • Grilled or baked salmon optional, for serving

Dressing:

  • 3 tbsp olive oil
  • Juice of 1 lime
  • 1 tbsp honey
  • 1 pinch chili flakes
  • Salt and pepper to taste
  • 5 fresh basil leaves chopped
  • 5 fresh mint leaves chopped

Instructions
 

  • Heat a non-stick pan over medium-high heat. Add the halloumi cubes and fry for 2-3 minutes on each side until golden and crispy. Set aside.
  • In the same pan, lightly fry the peach slices for 2-3 minutes on each side until caramelized. Set aside.
  • Halve the cherry tomatoes and thinly slice the cucumber.
  • In a small bowl, whisk together the olive oil, lime juice, and honey. Add chili flakes, salt, pepper, chopped basil, and mint. Stir until well combined.
  • In a large bowl, combine the cherry tomatoes, cucumber, crispy halloumi, and fried peach slices. Sprinkle with white and black sesame seeds.
  • Drizzle the lime-honey dressing over the salad and toss gently to combine. Serve immediately, optionally with grilled or baked salmon.
