Ingredients
  

  • 2 medium potatoes
  • 4 beaten eggs
  • 100 g mozzarella sliced
  • 2 tbsp parsley chopped
  • Salt to taste
  • Pepper to taste
  • Chili flakes to taste
  • 2 tbsp oil

Instructions
 

  • Heat 2 tablespoons of oil in a 28 cm pan over medium heat.
  • Add the sliced potatoes in a single layer, season with salt and pepper, and cook until golden brown and crispy on both sides.
  • Pour the beaten eggs evenly over the potatoes.
  • Sprinkle chopped parsley on top.
  • Place mozzarella slices over the eggs, then sprinkle chili flakes on top.
  • Cover the pan with a lid and cook on medium heat until the eggs set and the cheese melts.
  • Carefully flip the omelette to cook the other side for another minute or two.
  • Serve hot and enjoy!
