Ingredients
  

  • 5 large carrots
  • 70 g freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 large cloves of garlic pressed
  • 1 tbsp smoked paprika
  • 1 tsp chili flakes
  • 1/2 tsp pepper
  • 1 tbsp italian herbs
  • 2 tbsp parsley chopped
  • pinch of sea salt

Instructions
 

  • Preheat your oven to 200°C (400°F).
  • Peel the carrots and slice them in half lengthways. If they're particularly large, you can also cut them into quarters so that each piece has a flat side.
  • In a large bowl, combine the olive oil, minced garlic, smoked paprika powder, chili flakes, pepper, italian herbs, chopped parsley, and a pinch of sea salt. Mix well to create the marinade.
  • Add the carrots to the bowl with the marinade and toss until they are evenly coated.
  • Spread the grated Parmesan cheese onto a baking sheet or ovenproof dish.
  • Dip the flat sides of the carrots into the grated Parmesan cheese, ensuring they are generously coated.
  • Place the carrots, cheese-side down, on the baking sheet or dish.
  • Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and the Parmesan cheese is golden and crispy.
  • Once cooked, remove from the oven and serve hot. Enjoy your delicious Crispy Parmesan Carrots as a flavorful side dish or snack!
