2 cups broccoli florets steamed and mashed with a fork (200g) 1 cup shredded cheddar cheese (100g) ½ cup grated Parmesan cheese (50g) ½ cup breadcrumbs (60g) 1 large egg 2 garlic cloves minced ½ tsp salt ½ tsp black pepper ½ tsp red pepper flakes For the Parmesan Crust Coating: ½ cup all-purpose flour (60g) 1 large egg beaten ½ cup grated Parmesan cheese (50g) ½ cup panko breadcrumbs (60g)
Steam the broccoli florets until tender, then mash them with a fork.
In a large mixing bowl, combine mashed broccoli, shredded cheddar cheese, grated Parmesan, breadcrumbs, minced garlic, egg, salt, and pepper.
Mix well until the ingredients bind together. If the mixture is too wet, add a little more breadcrumbs.
Scoop out small portions and roll them into bite-sized balls (about 1-1.5 inches in diameter).
Roll each ball in flour, then dip into the beaten egg.
In a separate bowl, mix grated Parmesan and panko breadcrumbs.
Roll each ball in this mixture, pressing gently to ensure the coating sticks well.
Heat oil in a deep pan over medium heat (about 340°F / 170°C ).
Fry the balls in small batches for 3-4 minutes , or until golden brown.
Drain on paper towels.
