Ingredients
  

  • 2 small zucchini grated
  • 1 carrot grated
  • 120 g semolina
  • 5 slices cheddar grated
  • 2 eggs
  • 3 tbsp tbsp parsley chopped
  • Salt to taste
  • Chili flakes to taste
  • Pepper to taste
  • Pinch of nutmeg
  • Oil for frying

Instructions
 

  • Grate the zucchini and squeeze out all excess moisture using a clean kitchen towel.
  • Grate the carrot and cheddar cheese.
  • Add zucchini, carrot, cheddar, semolina, eggs, parsley, and seasonings to a bowl and mix until thick and sticky.
  • Let the mixture rest for a couple of minutes so the semolina can absorb moisture.
  • Heat a little oil in a pan over medium heat.
  • Scoop small portions of the mixture, shape into patties, and flatten gently.
  • Fry the patties for a few minutes per side until golden and crisp.
  • Transfer to paper towels briefly, then serve warm.
