Crispy on the outside and soft inside, these Zucchini Patties are a quick, cheesy veggie snack made with grated zucchini, carrot, and simple pantry ingredients. Perfect for dipping, meal prep, or a light meal.

2 small zucchini grated 1 carrot grated 120 g semolina 5 slices cheddar grated 2 eggs 3 tbsp tbsp parsley chopped Salt to taste Chili flakes to taste Pepper to taste Pinch of nutmeg Oil for frying
Grate the zucchini and squeeze out all excess moisture using a clean kitchen towel.
Grate the carrot and cheddar cheese.
Add zucchini, carrot, cheddar, semolina, eggs, parsley, and seasonings to a bowl and mix until thick and sticky.
Let the mixture rest for a couple of minutes so the semolina can absorb moisture.
Heat a little oil in a pan over medium heat.
Scoop small portions of the mixture, shape into patties, and flatten gently.
Fry the patties for a few minutes per side until golden and crisp.
Transfer to paper towels briefly, then serve warm.
