Ingredients
  

For the Salad:

  • 1 handful cherry tomatoes halved
  • 2 persian cucumbers diced
  • 1 small red onion thinly sliced
  • 1 small white onion thinly sliced
  • 2 garlic cloves finely chopped
  • 2 tbsp fresh parsley finely chopped

For the Dressing:

  • 3 tbsp extra virgin olive oil
  • Juice of ½ lemon
  • 1 tsp honey
  • Chili flakes to taste
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Prep the veggies: Halve the cherry tomatoes, dice the cucumbers, and thinly slice both red and white onions. Finely chop the garlic and roughly chop the parsley.
  • Make the dressing: In a small bowl or jar, whisk together the olive oil, lemon juice, honey, chili flakes, salt, and pepper.
  • Assemble the salad: Add all the prepared vegetables and herbs to a large mixing bowl. Pour the dressing over the top and toss gently until everything is well coated.
  • Serve: Let the salad sit for about 5–10 minutes to absorb the flavors, or enjoy immediately.
