Ingredients
  

  • 250 g curd cheese
  • 250 g flour
  • 3 eggs
  • 60 g sugar
  • Grated lemon peel
  • 1 tsp vanilla essence
  • 1 sachet packet of baking powder
  • 2 sachets vanilla sugar
  • 500 ml oil for frying

For rolling:

  • 2 tbsp powdered sugar
  • 1 tsp cinnamon

Instructions
 

  • Prepare the Dough:
    In a mixing bowl, add the curd cheese, flour, sugar, eggs, grated lemon peel, vanilla essence, and baking powder. Use a hand mixer to mix everything until well combined and a smooth dough forms.
  • Shape the Doughnuts:
    Heat the oil in a large, deep pot or fryer to 180°C (350°F).
    As the dough may be too liquid to form into balls by hand, use two teaspoons to scoop out small balls of dough. Carefully place the dough balls into the hot oil.
  • Fry the Doughnuts:
    Fry the dough balls in batches, making sure not to overcrowd the pot. Allow them to float in the hot oil for 5-7 minutes, or until they are golden brown and cooked through.
  • Drain and Roll:
    Using a slotted spoon, remove the fried dough balls from the oil and transfer them to a plate lined with paper towels. Allow them to drain well to remove excess oil.
    While the dough balls are still hot, roll them in a mixture of powdered sugar and cinnamon until evenly coated.
  • Serve and Enjoy:
    Serve the curd cheese doughnuts lukewarm as a delightful treat for breakfast, brunch, or dessert.

Notes

  • Avoid overcrowding the frying pan or fryer, as this can lower the oil temperature and result in soggy doughnuts. Fry the doughnuts in small batches to maintain consistent heat and achieve the best results.
  • Roll the warm doughnuts in the powdered sugar and cinnamon mixture while they are still hot. This allows the sugar to adhere to the surface of the doughnuts, creating a sweet and flavorful coating.
  • Curd cheese doughnuts are best enjoyed fresh on the day they are made.
