Broccoli Bread is a savory, cheesy loaf packed with fresh broccoli and sharp cheddar, topped with crispy parmesan. This easy-to-make bread is soft, flavorful, and perfect as a side or snack. Enjoy it warm with butter for a delicious twist on classic quick bread!
Preheat the Oven: Set your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
Prepare the Broccoli: Grate fresh broccoli using a box grater or a food processor. There’s no need to cook it beforehand—it will soften as the bread bakes.
Mix the Batter: In a large mixing bowl, add the flour, grated broccoli, eggs, shredded cheddar cheese, salt, baking powder, baking soda, and milk. Stir everything together until just combined. Be careful not to overmix, as this can make the bread dense.
Bake: Pour the batter into the prepared loaf pan. Sprinkle parmesan cheese, sesame seeds, and pumpkin seeds on top for a crispy, cheesy, and crunchy crust. Bake for 45–50 minutes or until a toothpick inserted in the center comes out clean.
Cool & Serve: Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack. Slice and enjoy warm with butter or your favorite spread!
