Ingredients
  

  • 2 Persian cucumbers thinly sliced (a mandoline slicer works best for paper-thin slices)
  • 3 medium tomatoes diced
  • 1 white onion thinly sliced
  • 100 g Feta cheese
  • 2 tbsp fresh parsley chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • salt and pepper to taste
  • chili flakes to taste

Instructions
 

  • Prep your vegetables: Start by thinly slicing the cucumbers and onions – the thinner, the better for a delicate texture. Dice the tomatoes and chop the parsley finely.
  • Add to a bowl: Place the cucumbers, tomatoes, onion, and parsley into a large salad bowl.
  • Season right in the bowl: Sprinkle the salt, pepper, and optional chili flakes over the veggies. Drizzle in the olive oil and lemon juice.
  • Toss gently: Using tongs or clean hands, gently toss everything together until the salad is evenly coated and well mixed.
  • Top with feta: Crumble the feta over the top as the final touch. No need to mix it in – let it sit beautifully on top for a stunning presentation.
