Ingredients
  

For the Flatbreads:

  • 500 g flour
  • 300 ml lukewarm water
  • 7 g dry yeast
  • 1 tbsp honey
  • 2 tbsp olive oil
  • Pinch of salt

For the Filling:

  • 200 g feta crushed
  • 3 tbsp cream cheese
  • 250-300 g frozen spinach squeezed and roughly chopped
  • 3 garlic cloves minced
  • 1 tsp black pepper

For the Sauce:

  • 50 butter
  • 1 tbsp parsley chopped
  • 2 garlic cloves minced

Instructions
 

Prepare the Dough:

  • In a large mixing bowl, combine flour, lukewarm water, dry yeast, honey, olive oil, and a pinch of salt.
  • Mix until a dough forms, then knead for about 10 minutes until smooth.
  • Cover the bowl with a clean towel and let it rise for one hour.

Form the Dough Balls:

  • After the dough has risen, divide it into 8 equal portions.
  • Roll each portion into a ball and let them rest for 10 minutes.

Prepare the Filling:

  • In a separate bowl, combine the crushed feta, cream cheese, chopped spinach, minced garlic, and black pepper.
  • Mix thoroughly until all ingredients are well incorporated.

Shape the Flatbreads:

  • Take one dough ball and lightly flatten it with your fingers until it's around ¾ inch thick.
  • Place a large tablespoon of the filling in the center of the dough.
  • Bring the edges of the dough over the filling and seal it in the center.
  • Turn the parcel over and flatten it gently with your fingers until the flatbread is about ½ inch thick.
  • Repeat with the remaining dough balls and filling.

Cook the Flatbreads:

  • Heat a non-stick pan with a bit of olive oil over medium-high heat.
  • Fry the flatbreads for 3-5 minutes on each side, until golden brown.
  • Keep an eye on them to prevent burning.

Make the Sauce:

  • Melt the butter in a small saucepan.
  • Transfer the melted butter to a small bowl.
  • Add the minced garlic and chopped parsley to the melted butter and stir well to combine.

Serve:

  • Spread the garlic parsley butter over the hot flatbreads before serving.
