For the Flatbreads: 500 g flour 300 ml lukewarm water 7 g dry yeast 1 tbsp honey 2 tbsp olive oil Pinch of salt For the Filling: 200 g feta crushed 3 tbsp cream cheese 250-300 g frozen spinach squeezed and roughly chopped 3 garlic cloves minced 1 tsp black pepper For the Sauce: 50 butter 1 tbsp parsley chopped 2 garlic cloves minced
Prepare the Dough :In a large mixing bowl, combine flour, lukewarm water, dry yeast, honey, olive oil, and a pinch of salt.
Mix until a dough forms, then knead for about 10 minutes until smooth.
Cover the bowl with a clean towel and let it rise for one hour.
Form the Dough Balls :After the dough has risen, divide it into 8 equal portions.
Roll each portion into a ball and let them rest for 10 minutes.
Prepare the Filling :In a separate bowl, combine the crushed feta, cream cheese, chopped spinach, minced garlic, and black pepper.
Mix thoroughly until all ingredients are well incorporated.
Shape the Flatbreads :Take one dough ball and lightly flatten it with your fingers until it's around ¾ inch thick.
Place a large tablespoon of the filling in the center of the dough.
Bring the edges of the dough over the filling and seal it in the center.
Turn the parcel over and flatten it gently with your fingers until the flatbread is about ½ inch thick.
Repeat with the remaining dough balls and filling.
Cook the Flatbreads :Heat a non-stick pan with a bit of olive oil over medium-high heat.
Fry the flatbreads for 3-5 minutes on each side, until golden brown.
Keep an eye on them to prevent burning.
Make the Sauce :Melt the butter in a small saucepan.
Transfer the melted butter to a small bowl.
Add the minced garlic and chopped parsley to the melted butter and stir well to combine.
