Oil for frying about 2 cups canola or sunflower oil
Cinnamon sugar for coating:

Instructions
Prep the apples: Core the apples and slice into ½-inch thick rings. Peel if desired. Pat dry with paper towels.
Mix wet ingredients: In a bowl, whisk together egg yolks, milk (or sparkling water), and vanilla extract.
Combine dry ingredients: In another bowl, mix flour, cornstarch, baking powder, cinnamon, and salt. Gradually whisk into the wet mixture until smooth.
Whip egg whites: Beat egg whites with 2 tablespoons sugar until soft peaks form. Gently fold into the batter.
Heat oil: Pour 1–2 inches of oil into a deep pan and heat to 350°F (175°C).
Fry apple rings: Dip apple slices into batter, letting excess drip off. Fry in batches, covered, over low to medium heat for 1–2 minutes per side until golden and puffed.
Drain & coat: Place fried rings on paper towels briefly, then toss immediately in cinnamon sugar.
Notes
Firm apples hold their shape better.
Cornstarch keeps the batter light and crispy.
Covering the pan while frying helps the apples cook evenly without burning.
Serve warm with optional ice cream or drizzle of caramel.
