Ingredients
  

  • 2 garlic bulbs peeled
  • 1 sprig fresh rosemary
  • 4 tbsp olive oil for confit
  • 1 slice bread sourdough works best
  • 1 tsp olive oil or toasting bread
  • 1 small ball burrata about 125 g
  • 1 tsp honey
  • sea salt to taste
  • Chili flakes to taste

Instructions
 

  • Make the garlic confit: Preheat oven to 170 °C -180 °C (340 °F–355 °F). Place peeled garlic cloves in a small baking dish with rosemary and 4 tbsp olive oil. Cover with foil and bake for 35–40 minutes, until garlic is soft and golden.
  • Toast the bread: Heat 1 tsp olive oil in a pan over medium heat. Toast the bread until golden and crisp on both sides.
  • Assemble the toast: Spread about 5 cloves of the garlic confit onto the bread. Top with torn pieces of burrata.
  • Add remaining garlic: Spoon the rest of the garlic confit over the burrata.
  • Finish with flavor: Drizzle honey over the top, then sprinkle with sea salt and chili flakes. Serve immediately.
