  • Preheat your oven to 200°C (390°F).
  • Line a baking dish with baking paper.
  • Remove the stems and seeds from the peppers.
  • Place them on the baking dish and roast for about 15 minutes, or until the skin blisters.
  • Once cooled, peel off the skin for a softer texture.
  • In a bowl, crumble the feta cheese with a fork.
  • Mix in 2 tablespoons of olive oil, garlic, oregano, black pepper, and chili flakes.
  • Use a teaspoon to carefully fill each pepper with the feta mixture.
  • Leave a little space at the top to prevent overflowing.
  • Place the stuffed peppers back onto the baking tray.
  • Top with onion rings and drizzle with the remaining 1 tablespoon of olive oil.
  • Bake for 15–20 minutes, until the onions soften and the filling is warmed through.
  • Remove from the oven and drizzle honey over the peppers.
  • Garnish with fresh parsley for extra freshness.
  • Serve warm and enjoy your homemade Greek appetizer!
