Ingredients
  

  • 1 slice sourdough bread
  • 100 g halloumi cheese, grated
  • 1 tbsp honey
  • 1-3 slices of ripe tomato
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Extra virgin olive oil, for drizzling
  • Fresh basil leaves, for garnish

Instructions
 

  • Prepare the Bread: Start by drizzling honey on one side of the sourdough slice and spreading it evenly. Sprinkle half of the grated halloumi over the honeyed side for added flavor.
  • Toast the Second Side: Flip the bread over, drizzle honey on the other side, and top it with the remaining halloumi.
  • Heat the Skillet: Place a non-stick skillet over medium heat. Carefully add the bread, toasting one side until the halloumi is melted and golden, about 2-3 minutes. Flip the toast and repeat until both sides are crispy and golden brown.
  • Add Tomatoes and Season: Remove the toast from the skillet and layer the fresh tomato slices on top. Season with salt and freshly ground black pepper to taste.
  • Finish with Olive Oil and Basil: Drizzle a bit of extra virgin olive oil over the tomatoes, and garnish with fresh basil leaves for a burst of color and flavor.
