Ingredients
  

Pizza Dough:

  • 350 g flour 00
  • 230 ml water
  • 0,5 g yeast
  • 10 g salt

Fillings:

  • 4 tbsp Olive oil
  • 200 g Mozzarella cheese
  • 300 g Mortadella slices
  • 4 Burrata cheese
  • 4 tbsp Pistachios chopped
  • 90 g Parmesan cheese grated
  • Fresh basil leaves

Instructions
 

Prepare Pizza Dough:

  • In a large mixing bowl, combine the flour, water, yeast, and salt. Mix until a rough dough forms.
  • Transfer the dough to a clean, floured surface and knead for about 20 minutes until smooth and elastic.
  • Place the dough back into the mixing bowl, cover with a clean kitchen towel or plastic wrap, and let it rise for 18 hours at room temperature.
  • After 18 hours, divide the dough into 4 equal-sized balls and shape them into smooth rounds.
  • Let the dough balls rest for another 4 hours before rolling out.

Preheat Oven:

  • Place a rack in the upper third of the oven, or at least 8" below the broiler. Preheat the oven to 500°F (260°C) with a baking steel or stone on the rack for at least 30 minutes.

Prepare Pizza Pockets:

  • Roll out each dough ball into a round shape.
  • Sprinkle the surface with olive oil and add mozzarella cheese, avoiding the borders.
  • Fold each round in half to make a semi-circle.

Bake the Dough:

  • Transfer the folded dough onto parchment paper on a baking peel or sheet.
  • Slide the dough onto the preheated baking steel or stone and bake for 4 to 5 minutes until light brown.
  • Turn on the oven’s top broiler and continue baking for 2 to 3 minutes until golden brown and charred in spots. Rotate the dough if needed to prevent burning.

Assemble the Sandwiches:

  • Gently open the dough pockets and add mortadella slices, burrata cheese, chopped pistachios, grated Parmesan cheese, and fresh basil leaves.
  • Drizzle with olive oil.

Garnish:

  • Fold the pizza sandwiches in half, closing the pockets.
  • Brush each sandwich with more olive oil and sprinkle with additional pistachios and Parmesan cheese.
