Ingredients
  

  • 2 slices of toast bread
  • 4 eggs
  • ½ red pepper finely chopped
  • 2 tbsp parsley chopped
  • Salt to taste
  • ½ tsp chili flakes
  • 1 slice of cheddar cheese
  • ½ avocado sliced
  • Oil for frying

Instructions
 

  • In a bowl, beat the eggs with the chopped red pepper, parsley, and a pinch of salt.
  • Heat a little oil in a pan over medium heat. Pour in the beaten eggs.
  • Immediately place the slices of bread onto the eggs, flipping them over to coat both sides and lightly toast them while the eggs cook.
  • Sprinkle chili flakes over the eggs, then cover the pan with a lid and let the eggs cook through.
  • Once the eggs are set, flip the sandwich and place a slice of cheddar cheese and the sliced avocado on top.
  • Fold the sandwich in half and serve warm.
