2 slices of toast bread 4 eggs ½ red pepper finely chopped 2 tbsp parsley chopped Salt to taste ½ tsp chili flakes 1 slice of cheddar cheese ½ avocado sliced Oil for frying
In a bowl, beat the eggs with the chopped red pepper, parsley, and a pinch of salt.
Heat a little oil in a pan over medium heat. Pour in the beaten eggs.
Immediately place the slices of bread onto the eggs, flipping them over to coat both sides and lightly toast them while the eggs cook.
