Ingredients
  

  • 2 large eggs
  • 3 tbsp grated cheddar cheese
  • 2 tbsp chopped parsley
  • Salt to taste
  • Pepper to taste
  • Chili flakes to taste
  • 1 tbsp Pesto alla Calabrese
  • 3 slices of bacon
  • 1 handful of baby spinach
  • 1 tbsp grated Parmesan cheese
  • 1 protein wrap

Instructions
 

  • In a small bowl, whisk together the eggs, grated cheddar cheese, chopped parsley, salt, pepper, and chili flakes until well blended.
  • Place a small nonstick skillet over medium heat and coat it with cooking spray. Add the bacon slices and cook until they are crispy. Once cooked, remove the bacon from the skillet and set aside on a paper towel to drain excess fat.
  • In the same skillet, pour in the egg mixture. Let it cook for about 1-2 minutes until it begins to set around the edges. Carefully place the protein wrap over the partially cooked eggs.
  • After about 30 seconds, gently turn the wrap over to the other side, allowing it to soak in the egg mixture and achieve a perfect color. Cook for another 1 minute.
  • Gently flip the omelette and wrap together, allowing the other side to cook for about 1 minute. Spread the Pesto alla Calabrese evenly over the wrap.
  • Layer the crispy bacon slices, baby spinach, and grated Parmesan cheese on one half of the omelette.
  • Carefully fold the omelette in half to encase the fillings. Cook for another 30 seconds to ensure everything is warmed through.
  • Remove from the skillet and serve immediately.
