Ingredients
  

For roasting in the oven:

  • 5 shallots peeled
  • 2 heads garlic halved crosswise
  • 1 tbsp Chili oil for drizzling
  • Salt and black pepper to taste

For the flavored butter:

  • 100 g butter softened
  • Roasted shallots and garlic (from oven)
  • 1 tsp chili flakes
  • Salt and black pepper to taste

For assembling the bread:

  • 1 ciabatta loaf
  • 150 g mozzarella shredded
  • Fresh parsley finely chopped
  • 2 tbsp honey

Instructions
 

  • Roast the aromatics: Preheat oven to 200°C (392°F), place peeled shallots and halved garlic on foil, drizzle with chili oil, season with salt and pepper, wrap tightly, and roast for about 45 minutes until soft and golden.
  • Make the flavored butter: Mix softened butter with the roasted garlic and shallots, add chili flakes, salt, and pepper until smooth and creamy.
  • Prepare the bread: Slice ciabatta in half lengthwise and place cut side up on a baking tray.
  • Assemble: Spread the roasted garlic–shallot butter evenly on the bread and top with shredded mozzarella.
  • Bake: Bake at 200°C (392°F) for 10 minutes until the cheese is melted, bubbly, and lightly golden.
  • Finish and serve: Drizzle with honey, sprinkle with fresh parsley, slice, and serve warm.
