This Roasted Tomato & Garlic Burrata Bread is a flavor-packed appetizer or light meal featuring slow-roasted cherry tomatoes, creamy burrata, and garlicky herb butter on crispy baguette slices. Perfect for sharing, brunches, or a cozy night in.
Place cherry tomatoes and the halved garlic head (cut side up) in a small baking dish. Drizzle generously with olive oil and season with oregano, chili flakes, salt, and pepper.
Roast for 30 minutes, or until the tomatoes are blistered and the garlic is golden and soft.
Prepare the garlic butter.
Once garlic is cool enough to handle, squeeze the cloves out into a bowl. Mix with the softened butter, chopped parsley, a pinch of chili flakes, salt, and black pepper.
Toast the bread
Preheat your broiler (or set oven to 180°C/350°F). Slice the baguette lengthwise and spread the garlic butter generously over each half.
Bake or broil for 15–25 minutes until golden and crispy. Keep a close eye to avoid burning.
Assemble the burrata bread.
Tear the burrata and spread it evenly over the warm toasted bread. Top with the roasted cherry tomatoes.
Garnish with fresh basil, drizzle with honey.
