Ingredients
  

  • 3 zucchinis
  • 1 finely chopped onion
  • 2 cloves of garlic crushed
  • 1 tbsp Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp Freshly chopped dill
  • Juice from half a lemon
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 200°C (392°F).
  • Place the 3 zucchinis on a baking tray and roast them in the oven until they are soft and can be easily pierced with a fork (about 40 minutes).
  • Remove them from the oven, cut them in half, and scoop out the flesh.
  • Drain the excess liquid from the zucchini flesh and mash it slightly with a spoon.
  • Add the finely chopped onion, crushed garlic, Greek yogurt, olive oil, freshly chopped dill, lemon juice, salt, and pepper.
  • Mix everything well and let the flavors blend.
  • Serve the salad on toasted whole-grain bread with garden tomatoes and cucumber sticks.
