3 zucchinis 1 finely chopped onion 2 cloves of garlic crushed 1 tbsp Greek yogurt 1 tbsp olive oil 1 tbsp Freshly chopped dill Juice from half a lemon Salt and pepper to taste
Preheat the oven to 200°C (392°F).
Place the 3 zucchinis on a baking tray and roast them in the oven until they are soft and can be easily pierced with a fork (about 40 minutes).
Remove them from the oven, cut them in half, and scoop out the flesh.
Drain the excess liquid from the zucchini flesh and mash it slightly with a spoon.
Add the finely chopped onion, crushed garlic, Greek yogurt, olive oil, freshly chopped dill, lemon juice, salt, and pepper.
Mix everything well and let the flavors blend.
Serve the salad on toasted whole-grain bread with garden tomatoes and cucumber sticks.
