  • 1 pomegranate seeds extracted
  • 50 g Feta cheese diced
  • 1 red onion finely chopped
  • 3 tbsp roasted peanuts roughly chopped
  • 1 handful fresh mint leaves finely chopped

  • Prepare the Salad: Begin by dicing the cucumbers and red onion. Use a spoon to gently extract the pomegranate seeds, avoiding any bitter white pith. Finely chop the mint leaves and roughly chop the roasted peanuts. Place all the ingredients in a large mixing bowl.
  • Make the Dressing: In a separate bowl or jar, whisk together olive oil, honey, lime juice, chili flakes, sumac, salt, and pepper. Taste and adjust seasoning as needed to balance the heat from the chili and the sweetness from the honey.
