Dough:
- 500 g all-purpose flour
- 1 tsp sugar
- 1 tsp salt
- 300 ml warm milk
- 50 g softened butter
- 1 egg
- 42 fresh yeast
Filling:
- 1 kg fresh cabbage finely shredded
- 3 shallots sliced
- 1 carrot grated
- 1 tsp salt
- 3 tbsp sunflower oil
- Pepper to taste
- 1 tsp paprika
- 1 tsp thyme
Make the dough: Mix warm milk, yeast, and sugar. Combine with flour, salt, butter, and egg. Knead until smooth, cover, and let rise 45 minutes.
Prepare the filling: Sauté shallots and carrot in oil. Add cabbage, salt, pepper, paprika, and thyme; cook 25 minutes until soft. Let cool.
Shape the buns: Divide dough into 12 pieces, roll into ovals, fill with cabbage, and seal.
Bake: Arrange on a tray, brush with egg, sprinkle sesame seeds, and bake at 180°C (350°F) for 30 minutes until golden.
