The best Chickpea Salad

1 can chickpeas rinsed and drained 4 tbsp olive oil 1 bell pepper white onion cut into 4 pieces 1 head garlic 1 lemon juiced 1 handful parsley chopped 1 tsp cumin salt to taste pepper to taste
Preheat oven to 400°F (200°C).
Cut the top off the garlic head. Place garlic, onion, and bell pepper on a baking sheet.
Drizzle with 1 tbsp olive oil and sprinkle with salt. Toss to coat.
Roast for about 35 minutes, until tender and slightly charred.
Let the veggies cool slightly.
Peel the skin off the bell pepper and chop the roasted vegetables into small cubes.
In a large bowl, combine chickpeas, chopped roasted vegetables, and parsley.
Squeeze the roasted garlic cloves out of their skins and add them to the bowl.
Add the remaining 2 tbsp olive oil, lemon juice, and cumin to the bowl.
Season with salt and pepper to taste. Toss everything well to coat.
