Ingredients
  

  • 1 can chickpeas rinsed and drained
  • 4 tbsp olive oil
  • 1 bell pepper
  • white onion cut into 4 pieces
  • 1 head garlic
  • 1 lemon juiced
  • 1 handful parsley chopped
  • 1 tsp cumin
  • salt to taste
  • pepper to taste

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Cut the top off the garlic head. Place garlic, onion, and bell pepper on a baking sheet.
  • Drizzle with 1 tbsp olive oil and sprinkle with salt. Toss to coat.
  • Roast for about 35 minutes, until tender and slightly charred.
  • Let the veggies cool slightly.
  • Peel the skin off the bell pepper and chop the roasted vegetables into small cubes.
  • In a large bowl, combine chickpeas, chopped roasted vegetables, and parsley.
  • Squeeze the roasted garlic cloves out of their skins and add them to the bowl.
  • Add the remaining 2 tbsp olive oil, lemon juice, and cumin to the bowl.
  • Season with salt and pepper to taste. Toss everything well to coat.
  • Serve with toasted baguette slices for dipping. Enjoy!
