Ingredients
  

  • 4 thick slices seedless watermelon about 1–1.5 cm thick, cut into sandwich shapes
  • 150 g block feta cheese cut into thick slices
  • 1 handful fresh arugula
  • 2 tbsp balsamic glaze

Marinade:

  • 3 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 garlic clove pressed
  • 1 tbsp sesame white and black
  • 1 tsp honey
  • ½ tsp dried oregano
  • ½ tsp chili flakes
  • Freshly cracked black pepper to taste

Instructions
 

  • In a small bowl, mix together the olive oil, lemon juice, lemon zest, sesame, pressed garlic, honey, oregano, chili flakes and freshly cracked black pepper. Add the feta slices and gently toss until they’re well coated. Cover and let the feta marinate in the fridge for at least 30 minutes.
  • While the feta marinates, slice the seedless watermelon into thick sandwich-sized pieces, trimming the edges if needed to create neat shapes.
  • To assemble the sandwich, start by placing one slice of watermelon on your plate. Add a layer of the marinated feta, then pile on fresh arugula. Drizzle with balsamic glaze and top with the second slice of watermelon.
  • Serve immediately, enjoying the cool, fresh watermelon with the flavorful marinated feta. You can eat it like a sandwich—messy but fun—or use a knife and fork for a cleaner bite.
