Ingredients
  

Salad:

  • 400 g watermelon cubed (seedless if possible)
  • 100 g arugula (rocket)
  • 1 large mango diced
  • 100 g blueberries
  • 200 g halloumi cheese diced
  • 1 handful fresh mint leaves roughly torn (about 10–12 leaves)
  • 2 tbsp pistachios roughly chopped (unsalted and roasted is best)

Citrus Dressing:

  • 3 tbsp extra virgin olive oil
  • 1 tbsp lime juice Juice of ½ lime
  • 2 tbsp orange juice Juice of ½ orange
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt & freshly cracked pepper to taste
  • chili flakes optional

Instructions
 

  • Prepare the halloumi: Dice the halloumi slices into bite-sized cubes. Heat a non-stick or grill pan over medium-high heat. Drizzle with a little olive oil, then cook the halloumi cubes for 1–2 minutes on each side until golden and crispy. Remove and set aside.
  • Make the dressing: In a small bowl, whisk together olive oil, lime juice, orange juice, honey, Dijon mustard, salt, and pepper until well combined.
  • Combine the salad: In a large bowl, add the arugula, watermelon cubes, diced mango, crispy halloumi, blueberries, pistachios, and torn mint leaves.
  • Dress the salad: Pour the citrus dressing over the salad and gently toss everything together, taking care not to break up the fruit.
  • Serve immediately and enjoy the fresh, vibrant flavors!
