This salad is pure sunshine on a plate! Juicy cherry tomatoes, soft mozzarella, and fresh basil come together in a simple, tangy balsamic dressing, with a little crunch from toasted sunflower seeds. It’s super easy to make, full of flavor, and perfect for a quick lunch, a light dinner, or as a colorful side that everyone will love.

Ingredients
  

Salad

  • 500 g cherry tomatoes
  • 200 g mozzarella balls
  • 2 tbsp toasted sunflower seeds
  • fresh basil leaves chopped

Dressing

  • 1 red onion very finely chopped
  • 2 cloves of garlic pressed
  • 2 tbsp balsamic vinegar
  • 1 tsp mustard
  • 3 tbsp olive oil
  • 1 tsp pesto
  • chili flakes to taste
  • 1 tbsp honey

Instructions
 

  • Prepare the dressing – Place finely chopped red onion and pressed garlic in a bowl. Add balsamic vinegar, mustard, pesto, chili flakes, honey, and olive oil. Whisk until fully combined.
  • Add tomatoes and mozzarella – Place halved cherry tomatoes and mozzarella balls over the dressing. Gently toss to coat everything evenly.
  • Finish the salad – Sprinkle chopped fresh basil and toasted sunflower seeds on top. Mix gently once more. Drizzle with a little extra honey and decorate with some basil leaves.
